Fennel Salad

Ingredients
  1. 1 large fennel bulb
  2. 1 ½ tablespoons lemon juice
  3. 1 tablespoon parsley
  4. 2 teaspoons olive oil
  5. 1 ½ teaspoons chopped onion
  6. ½ clove garlic, minced
  7. ¼ teaspoon sea salt
  8. Pepper to taste
Instructions
  1. Remove stalks and leaves from fennel bulb and cut bulb into thin slices (you should have about 2 cups). Toss well with remaining ingredients and chill for at least 30 minutes.
